The Very First Time
This is the first meal I made after I decided to “go organic” and “go local” in Summer of 2014. I left the doctors office and with no hesitation to make the complete change however there was one ingredient that took some time to give up - bacon.
It wasn’t only bacon that my doctor warned me about, she educated me on how our food is produced and processed. She said, if you must eat bacon, consider organic bacon and know the quality of the produce. “Your health depends on you doing the research.” The greater question my doctor challenged me with was, “Where does you food come from?” Overtime, asking this question before I ate, purchased produce from the farmers market or packaged products was no longer a task, it was naturally intuitive. Always intuitively asking, “How was my food was grown and by who’s hands.” If a product, always reading the label for common recognizable ingredients. For me and for all of us, these considerations are for our greater health otherwise we risk inflammation or disease.
